Summer ice blocks
As the hot weather drags on, Dr Libby is sharing this recipe to help you keep your cool.

Ingredients
1 cup pineapple, core and skin removed and diced
Juice of 1 lime
Juice of 1 lemon
3 tablespoons honey or pure maple syrup
1 cup filtered water
¼ cup fresh mint leaves
Serves: 6 (depending on size of mould)
Preparation time: 10 minutes
- Blend the pineapple in a high-speed blender until broken down.
- Add remaining ingredients and blend until well combined.
- Pour the mixture into an ice block mould and place in the freezer to set.
