Slow cooker sticky date pudding
This low‑and‑slow dessert is the perfect dessert for those chilly winter evenings.

Pudding
• 250g pitted dates, chopped
• 1 teaspoon baking soda
• 300ml boiling water
• 100g unsalted butter, softened
• 1 teaspoon vanilla essence
• 200g brown sugar
• 2 eggs at room temperature
• 375g self-raising flour
Syrup
• 150g brown sugar
• 80g golden syrup
• 750ml boiling water
- In a bowl, combine the dates with the baking soda and 300ml boiling water.
- In another bowl, beat the butter, sugar, vanilla, and baking soda until light and fluffy. Beat in the eggs one by one until well combined.
- Add the flour and dates (including the water) and mix until well combined.
- Pour the mix into a lightly greased slow cooker and top the pudding mix with brown sugar and golden syrup.
- Slowly pour in the 750ml boiling water.
- Cook on low for 4 hours.
- Serve with custard or vanilla ice cream.
