Sweet potato pie
A Southern staple, this sweet potato pie is super easy to make and a real crowd-pleaser.

- Place whole sweet potato in pot and cover with water; bring to a boil. Boil until tender when pierced with a fork (approximately 45 minutes).
- Preheat the oven to 180°C. Remove sweet potato from pot and run under cold water. Peel off skin and discard. Break sweet potato flesh apart and place in a bowl. Add butter and mix with an electric mixer until well combined.
- Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla, and beat on medium until mixture is smooth.
- Pour mixture into pie crust.
- Bake for 55 minutes or until a knife inserted in the centre comes out clean. Allow to cool and top with dollops of cream or melted marshmallows.
