Sweet potato pie


A Southern staple, this sweet potato pie is super easy to make and a real crowd-pleaser.

Ingredients


Serves: 8

Prep time: 15 mins

  • 450g sweet potato, with skin
  • ½ cup butter, softened
  • 1 cup caster sugar
  • ½ cup milk
  • 2 large eggs
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 (23cm) unbaked pie crust
  • Dollop cream or melted marshmallows to serve

Method


  1. Place whole sweet potato in pot and cover with water; bring to a boil. Boil until tender when pierced with a fork (approximately 45 minutes).
  2. Preheat the oven to 180°C. Remove sweet potato from pot and run under cold water. Peel off skin and discard. Break sweet potato flesh apart and place in a bowl. Add butter and mix with an electric mixer until well combined.
  3. Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla, and beat on medium until mixture is smooth.
  4. Pour mixture into pie crust.
  5. Bake for 55 minutes or until a knife inserted in the centre comes out clean. Allow to cool and top with dollops of cream or melted marshmallows.
